Only four more days of Merry. I can hardly believe it! I feel like I just started writing these.
I love sugar cookies and have been wanting to make some for a while. So, I dug out an old recipe that I had used before and tweaked it just a little.
What you will need :
– 2 sticks of butter
– tsp. vanilla extract
– 3/4 C sugar
– tsp. baking powder
– pinch salt
– 1 egg
– 2 C flour
– crushed peppermints ( about 20 should be enough )
– tsp. mint extract
Mis the wet ingredients together first. I would soften the butter in the microwave and then add everything else to it.
Then, add your dry ingredients.
Now comes the fun part. Take you 20 peppermints ( or however many you want ), place them in a freezer ziplock bag, wrap them in a towel, and crush them with a hammer. It is really a lot of fun. make sure there is at least two layers of towel between the hammer and the bag. Otherwise, your bag will start to tear from the force of the blows.
Fold the peppermint pieces into the dough mixture. This will take a little muscle power, but you can do it! Note: The peppermint pieces need to be very finely crushed. Otherwise, your won’t be able to properly cut your cookies.
Place your dough in plastic wrap and chill for an hour or more. Then, roll it out on a floured surface, cut into desired shapes and bake at 375 for 7-8 minutes.
After its finished cooling, enjoy your cookies!
